This week at WMC the research team focuses on a new public project involving high beta glucan barley flour in food processing. Working with USDA-ARS in Aberdeen, ID, WMC is making multiple products using barley flour including noodles, pita bread, tortillas, and muffins. The end products will then be shipped to Aberdeen for evaluation. Also this week, Janice is participating in the now-virtual Wheat Foods Council meeting.
